Sometimes I feel like I give you guys an unrealistic perspective of my daily life.
I post pictures of fresh veggies and pretty dinners, but not the muddy floors and messy sink.
I don’t want you to get the wrong idea and think that I have my junk together,
because some days I’m lucky if I brush my hair before it gets thrown up in my messy “mom bun”.
I’d love to say that every evening I prepare a delicious, home-cooked meal
completely from scratch, all while wearing a smile and a handmade apron.
But the truth is that most days I spend the drive home from work wondering what the heck I can throw together (while praying that someone in the family invites us over for dinner).
So I was thrilled when I was invited to participate in a freezer meal swap with some friends.
I get the warm and fuzzies just thinking about having ready-made meals in my freezer.
The ladies made delicious entrees, and everyone included
the recipe they used so that we can recreate the meals for ourselves.
We had meatball sliders, baked spaghetti, chicken pie, broccoli and rice casserole,
sausage, egg, and cheese muffins, and cheeseburger soup.
I’m thrilled to have a freezer full of meals,
but my favorite part of this idea was gathering with friends and swapping recipes.
I love spending time with other moms who juggle work and family and can relate to the madness
of trying to find some sort of balance between it all without losing their minds getting too stressed out.
Since breakfast is my favorite meal of the day, and mornings are also my most rushed time
I decided to make breakfast for the freezer meal swap.
I found this great recipe for sausage, egg, and cheese muffins from Cleverly Simple
and was really impressed with how simple and delicious they were.
Of course, it’s probably a good idea to try the recipe before you decide to take it to a meal swap.
Maybe then you won’t be up until midnight the night before trying to finish up that laaaast batch.
Luckily, I had one extra bag, so we had breakfast for dinner the next day….
since I didn’t have anything prepared ahead of time.
I swear, I’m going to do better about meal prep y’all!
