The Beginning: Chickens and Beyond

Our conversation began with Mandy sharing how her passion for nutrition was ignited. Growing up with a mom who was an herbalist, Mandy was always surrounded by health-conscious practices. However, it wasn’t until her early 20s, when she was diagnosed with pre-diabetes, that she truly began to understand the impact of diet on health. This wake-up call led her to take small steps toward better nutrition, which eventually turned into a lifelong journey of health and wellness.

Small Steps, Big Changes

Mandy emphasizes the importance of starting small. Her initial steps were simple changes like reading labels and reducing sugar intake. Over time, these small steps accumulated, leading her to a much healthier lifestyle. Now, Mandy owns a nutrition consulting business, grows her own food, and even raises chickens and a dairy cow.

The journey wasn’t instant. It took over ten years of consistent, small efforts. Mandy’s story is a powerful reminder that everyone’s journey starts somewhere, and it’s okay to begin with small, manageable steps.

Choose Your Hard

We also discussed the struggles that come with trying to make healthier choices. For example, Mandy shared her challenges in the medical dietitian world, where she felt conflicted about promoting sugar-free substitutes instead of whole, nutritious foods. This experience pushed her towards functional nutrition, which looks at the whole body and aims to use food as medicine.

We talked about the balance between enjoying treats and making healthier choices. Mandy believes in the power of making food from scratch, which not only ensures healthier ingredients but also creates meaningful experiences. Baking cookies with her kids using real sugar, for instance, is an intentional act that contrasts with the convenience of store-bought treats.

Finding Balance

Throughout our conversation, the theme of balance kept emerging. Mandy shared how she manages to balance her diet and lifestyle, and how she advocates for making intentional choices. For her, it’s not about eliminating all sugary foods but rather about making conscious decisions and understanding what you’re putting into your body.

About Mandy

Mandy is not only a registered dietitian with her own nutrition counseling business, Healing Nutrition LLC, but she also runs a thriving family farm in the foothills of Western North Carolina. Henry River Farms has become a beloved spot in our town, where people create lasting memories each year. Despite its newness, the farm is already a staple in our community, thanks to Mandy and her husband’s dedication and teamwork.
