This is seriously one of my family’s favorite meals now.
I liked it even better because I didn’t cook it—the hubs did!
Plus, you just can’t beat 3 ingredients &
only one pot to clean!
Of course, we love to be outdoors, so Dustin cooked this
in our dutch oven over an open fire
.
But you could always go the more conventional route
& use that handy kitchen stove.
This meal was not only super simple, it was absolutely delicious!
So good that my son chucked his spoon across the room
(the spoon that he is super proud to use now that
he’s mastering the whole hand-eye coordination thing),
because he wanted to use his hands to shovel the food into his mouth quicker!
But he didn’t stop there.
His hands weren’t quick enough either,
so he decided to just eat straight off the plate.
That’s when you know dinner was a hit!

- 1 tbsp. oil
- 2 pounds chicken (we used a mixture of breast & thigh)
- 2 cups beef stock
- 1 cup jasmine rice
- Start your fire & warm the dutch oven for approximately 10 minutes.
- Add a small amount of oil & cook chicken on one side for about 10 minutes.
- Flip chicken.
- Add stock & rice.
- Cook until rice is tender & chicken is cooked thru-approximately 20 minutes.
- Preheat oven to 450 degrees.
- Add oil & cook chicken on one side for about 10 minutes.
- Flip chicken.
- Add stock & rice.
- Cook until rice is tender & chicken is cooked thru-approximately 20 minutes.
